But even that gets old.
Variety is the spice of life.
I bought focaccia flat breads and thought, "What if I made gourmet pizzas for everyone?" I cooked chicken, tomato, and onions in the crock pot, and after 4 hours sliced them up even more. I used a tomato dipping sauce and Dinosaur barbecue to spread on the focaccia, then spread the chicken, more tomatoes, basil leaves, and onion underneath sprinkled cheese and baked for 15 minutes (according to a Google search, 'How long do you bake a homemade pizza?).
The edges were overdone by 30 seconds, but the rest came out great. The flavors were stupendous. Although pizza-esque, it was more like a full meal sandwich, thick with its possibilities. Chitunga gave his thumbs up and said it was delicious, so now we have something new to add to the last 300 days of being trapped into one home. The crock-potted chicken with great sauces is an extra feat, but it did make the meal extra delicious (and there's chicken left over for additional meals this week).
And this reminds me of my Grannie Annie who used to make the best pizzas from sausage and peppers and onions.
After two days of teaching during a nor'easter and pandemic, I needed a food post to keep me going. So here it is. Now back to work.
